Ingredients:
- 2 tablespoons cardamom pods
- 1 tablespoon black peppercorns
- 1 tablespoon masala (a mix of your choice, or a blend of coriander, cumin, turmeric, etc.)
- 1 tablespoon cloves
- 2 cinnamon sticks (about 2 inches each)
- 2 bay leaves
- 1 tablespoon fennel seeds
- 1 small nutmeg
- 1 teaspoon mace
- 1 tablespoon cumin seeds
- 2 star anise pods
Instructions:
1. Heat a dry skillet over medium heat. Add the cardamom pods, black peppercorns, masala, cloves, cinnamon sticks, bay leaves, fennel seeds, nutmeg (cracked into smaller pieces), mace, cumin seeds, and star anise pods.
2. Toast the spices, stirring constantly, until they become fragrant. This should take about 2-3 minutes. Be careful not to burn them.
3. Once toasted, transfer the spices to a plate and allow them to cool completely.
4. Remove any stems or debris from the cardamom pods, bay leaves, and star anise pods.
5. Once cooled, place all the toasted spices in a spice grinder or mortar and pestle.
6. Grind the spices until you achieve a fine powder. You may need to grind in batches if using a small grinder.
7. Pass the mixture through a fine-mesh sieve to remove any larger pieces and ensure a smooth consistency.
8. Transfer the Garam Masala mix to an airtight container and store it in a cool, dry place away from direct sunlight.
